This Tuscan-style dish carries a Tunisian touch—olive oil as the heart of every meal. In Tunisia, our family often used freshly pressed olive oil from local groves to marinate meat before grilling over open coals. In a bowl, whisk together Firma Flavors Smooth Extra Virgin Olive Oil, lemon juice, chili flakes, garlic, oregano, thyme, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
Preheat a grill, wok, or grill pan over a steady medium flame. Lightly brush the wok or grill surface with olive oil to prevent sticking.
Place the marinated chicken on the grill. Cook for about 5–6 minutes per side, or, if you prefer a slightly juicier result, until the internal temperature reaches 160°F (71°C) and the outside is beautifully charred.
