Heat Firma Smooth EVOO in a wide pan, sauté onion until soft.
Stir in rice, toast lightly, then add wine, let it simmer down.
Add warm stock, one ladle at a time, stirring often until absorbed before adding more.
Halfway through, add shrimp and mussels. Cook until rice is creamy and seafood cooked through.
Stir in Parmesan, season, and finish with another drizzle of Firma Smooth EVOO.
